For the sponge

150g polenta

3 eggs

250g caster sugar

150ml olive oil

200g almond ground

1 tsp Orange Blossom Water

Zest of two large oranges

Juice of one large orange

For the glaze

100g caster sugar

100g Unsalted pistachios 

60g Caster Sugar 

60g Cornflour 

110g Flour 

110g Unsalted Butter 

Pinch of salt 

Zest of a lemon 

This recipe is super easy. The whole thing can be whipped up in your food processor, but if you don't have one that's fine too, just take some lockdown aggression out on those nuts. 

If you want to make this gluten free you can swap the flour for a gluten-free flour, and add 1/4 tsp of xanthan gum to bring it all together.

First pre-heat your oven to 160 degrees (fan).

I learnt how to cook at Ballymaloe Cookery School in Ireland. I arrived a naive, wide-eyed 18 year old from Ladbroke Grove, and left months later with a newly acquired appreciation of rural life. I learnt how to milk a cow, how to raise ducks, how what you feed chickens directly affects the colour of their yolks. Above all, I learnt about kindness: Irish women took me under their wing; world renowned visiting chefs took the time to talk to me; and the other students - whose ages ranged from 20 to 70 - became like a family to me.
